Ingredients

CRUST
1/2 c butter softened

1/4 c packed brown sugar
1 c all purpose flour
1/4 c quick cooking oats
1/4 c finely chopped walnuts
1/2 tsp cinnamon
FILLING
2 8 oz. pkgs. cream cheese softened
1 14 oz. can sweetened condensed milk
1/2 c apple juice
3 extra large eggs, lightly beaten
TOPPING
2 medium tart apples, peeled and thinly sliced
1 Tbsp butter

caramel ice cream sauce (jar)

Directions

In a small bowl, cream butter and brown sugar until light and fluffy. Gradually add flour, oats, walnuts and cinnamon until well blended. Press into the bottom and a little up the sides of a greased 9 inch springform pan. Place on baking sheet at 325 for 10 minutes or until set, cool.

In a large bowl, beat cream cheese until fluffy, beat in milk and juice until smooth, add eggs; beat on low speed until combined (batter is thin). Pour into crust.

Return pan to baking sheet, bake at 325 for 45 minutes or until center is almost set. Cool on rack for for 1 hour and refrigerate after that.

In a large skillet, cook and stir gently the apples in butter over medium heat about 5 minutes. Cool. Arrange over cheesecake. In a small saucepan combine cornstarch, cinnamon and juice until smooth. Bring to a boil. Reduce heat and cook and stir for 1 minute or until thickened. Bruch over the apples. Chill. Before serving Garnich with Caramel Ice Cream Sauce, if desired. If not leave plain.

The picture of this cheese cake makes my mouth water because it has to be scrumptious - I love cheesecake! I am a diabetic so this is "death by cheesecake" so if you know of a moderation to a diabetic recipe would you please share it with me...thanks!

Kim, I did look at the chocolate, I live near Baltimore, Md., I guess I'll look for it in a Wegman's store. Thanks, anyway, but I have tons of cheesecake recipes, this one takes time so I want the ingredients to be perfect.
