Rhubarb Bar Dessert

I would call this recipe more of a Rhubarb Crunch but in Gramma Bea's box the name is what it is. But in our family we will eat rhubarb any way.

Ingredients

1 1/2 c
oatmeal
1 1/2 c
flour
1 c
brown sugar
1/2 tsp
soda
1/4 tsp
salt
3/4 c
butter or margarine
2 Tbsp
corn startch
1 1/2 c
sugar
1/4 c
water
4 c
rhubarb (cut)
1/2 c
chopped nuts (for the top)

Directions Step-By-Step

Combine oatmeal, flour, brown sugar, soda and salt. Cut in butter until crumbly. Lightly press 2/3 of this mixture into a 9 x 13 pan. Bake at 350 for 12 min.

In a saucepan combine cornstarch and sugar. Add water and rhubarb. Cook for about 5 min. stirring constantly. Pour over crust and sprinkle with the remaining topping and nuts. Continue baking for 25 to 30 more min. Serve with whipped cream or ice cream.
