Ingredients

3/4 c sugar
1/4 c margarine
1 egg
1/2 c milk
2 c flour
1 tsp baking powder
1/2 tsp salt
2 c blueberries
CRUMB TOPPING:
1/2 c sugar
1/3 c flour
1/2 tsp cinnamon
1/4 c margarine

Carol's Notes:

Gotta love Blueberry Buckle , would make a great dessert for Thanksgiving and is a comfort food. Like to make this as it is easier then making a whole pie for me. Enjoy!!

This recipe came from my Cookbook "Savoring Cape Cod" submitted by Judi Francis. Great old original recipes.

 

Directions

Preheat oven 375 degrees F.
Mix sugar, margarine and egg together. Stir in milk.

In seperate bowl sift together flour, baking powder and salt. Add flour mixture to sugar mixture. Mix well. Carefully fold in blueberries.

Spread in 2 9" square pans (greased) or 1 oblong pan. Mix together crumb topping ingredients and sprinkle over batter.

Bake for 30-45 minutes or until lightly golden around the edges. Cool before cutting into squares.
Makes 24 squares.

Well Aunt Martha huh? Never got a recipe from any of my Aunts, my mom was the best cook.

My Mother in Law always made this for my Hubby when he was growing up, he grew up in Maryland...she just called it "Blueberry Cake". He said it was his favorite 'cake' growing up.
Even with her recipe he says to me "you don't make it quite right, it doesn't taste like hers" (so after trying, I just let her bake it for him...I'm allergic to blueberries anyway).
Well, we alllll remember the taste of our favorites when our Mom's baked/cooked them, and we thought 'it was the best'...=;D

Tks Cindy, I just ate two pieces and am about to post the pictures, and guess what it is the best blueberry cake or buckle I have ever had, I was suprised, as I have made other recipes for this before but this one is the BEST! yum ( except for the 2 lbs, I will gain)
