Carol's Story

Gotta love Blueberry Buckle , would make a great dessert for Thanksgiving and is a comfort food. Like to make this as it is easier then making a whole pie for me. Enjoy!!

This recipe came from my Cookbook "Savoring Cape Cod" submitted by Judi Francis. Great old original recipes.

Ingredients

3/4 c
sugar
1/4 c
margarine
1
egg
1/2 c
milk
2 c
flour
1 tsp
baking powder
1/2 tsp
salt
2 c
blueberries
CRUMB TOPPING:
1/2 c
sugar
1/3 c
flour
1/2 tsp
cinnamon
1/4 c
margarine

Directions Step-By-Step

Preheat oven 375 degrees F.
Mix sugar, margarine and egg together. Stir in milk.

In seperate bowl sift together flour, baking powder and salt. Add flour mixture to sugar mixture. Mix well. Carefully fold in blueberries.

Spread in 2 9" square pans (greased) or 1 oblong pan. Mix together crumb topping ingredients and sprinkle over batter.

Bake for 30-45 minutes or until lightly golden around the edges. Cool before cutting into squares.
Makes 24 squares.

aww thanks Deanie, your right, my family loves my cooking and baking, but being hard on ourselves helps us to try to do better next time, so it can be a good thing sometimes I think, right?

I loved making pies when raising my four kids. I pretty much made cakes only for birthdays. Love baking more than cooking, but, I did plenty cooking while raising my family & people seem to like it. Your pie looks great, your too hard on yourself. My cakes never looked perfect, but like you said,it is the taste that counts most. I really like this recipe club too!

A little secret about me, I hate making pies and think they always look awful. But they taste wonderful, so thats all that counts. I am sure you have some wonderful recipes to share as well. Thats why I love this recipe club, so many new things to try instead of the same old. Look forward to it Deanie !

I will try to remember, Carol. I browsed you recipes & you blueberry pie looked delish. I'll have to try that sometime. Maybe some day I'll get around to posting some of my favorites.
