Ingredients

2 c
canola oil for frying
2
large ripe peaches
1 c
self rising flour
1 tsp
salt
3 Tbsp
sugar
1 tsp
cinnamon
2 Tbsp
melted butter
1/2 c
whole milk
2
eggs
1/4 c
powdered sugar

Step-By-Step

1In a small saucepan, heat oil over medium high heat until 350 degrees.
Peel and pit peaches and slice into ½-inch slices, set aside.
2In a medium bowl, whisk together flour, salt, sugar and cinnamon. Add butter, milk and eggs. Whisk until smooth.
Dip each peach slice into batter with a fork and place gently into heated oil, 4 at a time, cooking 2 minutes. Flip over and cook 1-2 additional minutes, until golden brown.
Drain on paper towels.
3Serve sprinkled with sifted powdered sugar.
Serves 4.
