When I became diabetic, a good friend, gave me some cookbooks to help me. Most of the recipes seem like regular recipes to me. This one does call for some sugar substitute along with regular brown sugar. If you aren't diabetic, you can use all regular brown sugar. From Fix-It and Forget-It Diabetic Cookbook. Start with a 4 quart slow cooker.

Ingredients For apple peanut crumble (in slow cooker)

  • 4 md
    cooking apples, peeled and sliced
  • 1/3 c
    packed brown sugar
  • brown sugar substitute to equal 3 tbs.
  • 1/2 c
    all-purpose flour or unbleached all-purpose flour
  • 1/2 c
    quick-cooking dry oats
  • 1/2 tsp
    cinnamon
  • 1/4 to 1/2 tsp
    nutmeg
  • 1/4 c
    light, soft tub margarine, softened*
  • 2 Tbsp
    peanut butter
  • ice cream or whipped cream, optional
  • *light butter, may be more healthy--margarine usually has transfats. check labels. may change nutritutional values some.

How To Make apple peanut crumble (in slow cooker)

    Place apple slices in a 4 quart slow cooker.

    Combine brown sugar, sugar substitute, flour, oats, cinnamon, and nutmeg. Cut in margarine and peanut butter. Sprinkle over apples.

    Cover cooker, and cook on LOW 5-6 hours. Serve warm or cold, plain or with ice cream or whipped cream. Makes 8 servings.
