This is a good anytime recipe, but definitely serve during the fall months, when these fruits are at their peak of freshness. Serve with brunch or have for dessert. Made some changes in original recipe (from Pampered Chef).

Ingredients

"butter flavored" cooking spray
3 c
apples, peeled and chopped
2 c
fresh cranberries
1 c
granulated sugar, or diabetic substitute
1 c
rolled oats
1/2 c
brown sugar, firmly packed or diabetic substitute
1/3 c
all-purpose flour or unbleached all-purpose flour
1/2 c
pecans
6 Tbsp
butter or vegetarian alternative or spray top with "butter flavored" cooking spray

Step-By-Step

1Preheat oven to 350°F. Spray a shallow 2 quart baking dish, with cooking spray.
2In prepared dish, combine apples, cranberries, and granulated sugar.
3In medium bowl, combine oats, brown sugar, flour, and pecans. Sprinkle oat mixture over fruit. Dot, with butter.
4Bake for 35-45 minutes, or until fruit is tender and topping is browned. Makes 6-8 servings.
