Ingredients For pineapple cheese bread pudding

4slices white or whole wheat bread, cut into cubes

1 ccanned crushed pineapple (unsweetened)

2eggs

1/2 cpart-skim ricotta cheese

sweetener equivalent to 8 teaspoons sugar

2 tspvanilla extract

1 tsplemon extract

1/2 tspground cinnamon

2 cskim milk
How To Make pineapple cheese bread pudding

1Preheat oven to 350. Place bread cubes in an 8 inch square baking pan that has been sprayed with a nonstick cooking spray. Spread pineapple evenly over the bread.

2In a blender container, combine remaining ingredients. Blend until smooth, Pour mixture evenly over bread and pineapple. Let stand 5 minutes. Sprinkle with additional cinnamon, if desired.

3Bake, uncovered, 35-40 minutes, until set. Chill and cut into squares to serve.
