Ingredients For pineapple cheese bread pudding

    slices white or whole wheat bread, cut into cubes
  • 1 c
    canned crushed pineapple (unsweetened)
  • 2
    eggs
  • 1/2 c
    part-skim ricotta cheese
  • sweetener equivalent to 8 teaspoons sugar
  • 2 tsp
    vanilla extract
  • 1 tsp
    lemon extract
  • 1/2 tsp
    ground cinnamon
  • 2 c
    skim milk

How To Make pineapple cheese bread pudding

    Preheat oven to 350. Place bread cubes in an 8 inch square baking pan that has been sprayed with a nonstick cooking spray. Spread pineapple evenly over the bread.

    In a blender container, combine remaining ingredients. Blend until smooth, Pour mixture evenly over bread and pineapple. Let stand 5 minutes. Sprinkle with additional cinnamon, if desired.

    Bake, uncovered, 35-40 minutes, until set. Chill and cut into squares to serve.
