I was looking to create something different, yet easy. This turned out to be a big hit in my family.

Ingredients

2 c
all purpose flour
1 c
margarine
3/4 c
sugar
1/4 tsp
baking powder
3 pkg
neufchâtel, softened
3/4 c
sugar
1 Tbsp
vanilla extract
8 oz
whipped topping, divided
1 lb
strawberries, fresh, chopped, divided

Step-By-Step

1Preheat oven to 350'. Combine flour, sugar, margarine, and baking powder. Pastry cutter works great. Press and shape into 9" or 10" tart pan.
2prick holes in the bottom of the crust and bake for 20-25 minutes or until crust is firm. Remove from oven and let cool on cooling rack.
3Mix Neufchâtel, sugar, and vanilla until smooth. Stir in 2/3 of the container of whipped cream (about 1 1/2 cups).
4Fold in strawberries and spread in crust
5Top with remaining whipped topping and remaining strawberries. Refrigerate for an hour or until ready to serve
