Apple pie is one of my most favorite things to make! It's best if you use a combination of sweet and tart apples. I like to use granny smith for tartness and honey crisp or macintosh or pink ladies for the sweet apples. Experiment to see what you like best! There are never any leftovers with this pie!
Combine the 1/2 cup sugar, the 2 tablespoons flour, and the lemon zest. Sprinkle apple slices with lemon juice; add sugar mixture and toss to coat. Fill a pastry-lined 9-inch pie plate with apple mixture.
Combine remaining sugar, flour and the spices. Cut in the butter with a pastry cutter till crumbly; sprinkle mixture atop apples. (It will pile up quite high)
Bake in a 375 degree oven for 60 minutes. Pie is done when topping is golden brown and apples are bubbling. Serve warm. Makes 8 servings.
