Ingredients For chocolate silk pie

crumb crust (below)

1/2 cbutter, softened

1/2 csugar

2blocks 2 ounces unsweetened baking chocolate, melted and cooled

3egg yolks, room temperature

1 tspvanilla

3egg whites, room temperature

1/4 csugar
-
1/2 cheavy or whipping cream

coffee topping (below)
How To Make chocolate silk pie

1Prepare Crumb Crust: Combine 1 1/2 cups vanilla wafer crumbs (about 45 wafers) and 1/3 cup melted butter in small mixing bowl. Press mixture firmly onto bottom and up side of 9 inch pie pan. Bake at 350 for 10 minutes. Cool. Set aside.

2Cream butter and 1/2 cup sugar in small mixer bowl until light and fluffy. Add cooled chocolate; beat well. Add egg yolks, one at a time, beating well after each addition; stir in vanilla. Beat egg whites until foamy; gradually add 1/4 cup sugar, beating until stiff peaks form. Fold egg white mixture into chocolate mixture. Whip cream until stiff; fold into chocolate mixture. Pour into prepared crust. Cover; chill until firm.

3Prepare Coffee Topping: Combine 1/2 cup heavy or whipping cream, 1 teaspoon instant coffee granules, and 2 tablespoons powdered sugar in small mixer bowl; beat until stiff peaks form. Garnish with dollops of topping.
