- double crust pie crust
- 4 c
- frozen blueberries, thawed
- 1/2 c
- juice of one lemon
- 2 Tbsp
- corn starch
1Combine filling ingredients. Allow to sit for a few minutes to accumulate juices.
2Line 9" pie pan with one crust. Pour blueberry filling into crust and top with the other crust. Cut slits in top.
3Bake at 425 for 20 minutes. Reduce heat to 350 and continue baking for another 45 - 55 minutes or until brown.
4Note -- If using fresh berries, crush one cup to make juice.
5Note -- For a brown crust, brush with a little milk and lightly sprinkle sugar on top.
