Ingredients For mousse for a crowd

  • 5 c
    2 1/2 twelve ounce package semi sweet chocolate chips
  • 3/4 c
    water
  • 1/4 c
    amaretto
  • 12
    egg yolks, room temperature
  • 3 c
    heavy or whipping cream
  • 1 1/2 Tbsp
    amaretto
  • 12
    egg whites, room temperature
  • 4 Tbsp
    sugar

How To Make mousse for a crowd

    Combine chocolate chips, water, and 1/4 cup amaretto in top of double boiler over hot, not boiling, water; stir until mixture is smooth. With wire whisk, beat egg yolks, one at a time, into chocolate mixture; cool to room temperature. Beat cream and 1 1/2 tablespoons amaretto in large bowl until soft peaks form. Fold a fourth of the cream into chocolate mixture; gently fold in remaining cream.

    Beat half the egg whites in large mixer bowl until foamy; gradually add 2 tablespoons of the sugar, beating until stiff peaks form. Fold into chocolate mixture. Beat remaining egg whites in large mixer bowl until foamy; gradually add remaining 2 tablespoons sugar, beating until stiff peaks form. Fold into chocolate mixture. Spoon into one or two large serving bowls or individual dessert dishes. Cover; chill until firm.
