Coconut Ice Cream Baskets

These are perfect for a scoop of ice cream. My grandchildren love coconut so it's perfect for them. I make these at Easter too and fill them with green colored coconut and small candies.

Ingredients

3 egg whites
pinch salt
14 oz sweetened coconut
1/2 t. vanilla extract
1 tablespoon flour

Directions Step-By-Step

Add egg whites and salt to an electric mixer, beat until fluffy, and soft peaks form. Fold in coconut and flour. Press dough into a non-stick muffin tin, on the bottom and up the sides in a thin ΒΌ" layer. Bake at 350 for 20 mins until sides and tops turn golden brown. Bottoms will remain white.
Allow to cool.
