Bunyan's Diabetic Cherry Almond Cheesecake Bars

Ingredients

FOR THE CRUST

2/3 c
all purpose flour
2/3 c
quick cooking oats
3/4 tsp
splenda/brown sugar blend
2 Tbsp
finely chopped almonds
1/4 c
cold butter cut in pieces

FOR THE FILLING

28 oz
reduced fat cream cheese
8 tsp
splenda/sugar blend
2 tsp
pure vanilla extract
1/4 tsp
almond extract
4 large
eggs, lightly beaten
1/3 c
finely chopped dried cherries

FOR THE TOPPING

1/2 pt
heavy whipping cream
1/2 tsp
splenda/sugar blend
1 tsp
pure vanilla extract

Step-By-Step

1Crank the oven to 350
2Spray an 8 X 8 X 2 inch baking pan with PAM, set aside
3Dump the flour, oats, Splenda/brown sugar blend, & almonds into a medium bowl
4Stir to combine
5With a pastry blender, cut in the butter until it resembles course crumbs.
6Press the crust mixture into the baking pan
7Bake for 12 minutes
8Meanwhile, back at the ranch, dump the cream cheese, Splenda/sugar blend, vanilla & almond extract into a large bowl
9Beat with an electric mixer on medium speed until light & fluffy
10Add the eggs, one at a time, mixing on low speed until just combined
11Stir in the cherries
12Spread the cream cheese mixture over the partially baked crust
13Bake for 25 to 35 minutes or until the cream cheese layer is set
14Cool to room temperature on a wire rack
15Cover and chill for 24 hours before serving
16Whip the heavy whipping cream in a chilled bowl,adding the Splenda/sugar blend and vanilla just when the cream hits soft peaks, keep whipping until stiff peaks form
17Cut the finished product into bars, plate with a dollop of whipped cream on each one and serve
