Ingredients For ice cream sandwiches

1/2 cshortening

1 csugar

1egg
-
1 tspvanilla

1 1/2 cplus 2 tablespoons all purpose flour

1/3 cunsweetened cocoa

1/2 tspbaking soda

1/2 tspsalt
-
1/4 cmilk
-
ice cream (any flavor)
How To Make ice cream sandwiches

1Combine shortening, sugar, egg, and vanilla in large mixer bowl until well blended. Combine flour, cocoa, baking soda, and salt; add alternately with milk to sugar mixture until ingredients are well blended. Cover and chill about 1 hour.

2Drop by tablespoonfuls onto ungreased cookie sheet. With palm of hand or bottom of glass, flatten each cookie into a 2 3/4 inch circle about 1/4 inch thick. Bake at 375 for 8-10 minutes or until almost set. Cool 1 minute. Remove from cookie sheet; cool completely on wire rack.

3Place scoop of slightly softened ice cream in flat side of one cookie; spread evenly with spatula. Top with another cookie, pressing lightly. Wrap and immediately place in freezer. Freeze until firm.
