Catherine Cappiello Pappas

It's been a long quest...countless recipes, dozens of cookies baked, but alas, I finally have a cookie that is as soft and chewy and delicious as Entenmann's- I kid you not, these cookies are just that good.

Preheat oven to 350 degrees F.

Line two cookie sheets with parchment paper.

In the bowl of your mix master, blend sugars and eggs.

Add vanilla, oil, margarine, and salt. Beat until a thick batter forms.

Add flour one 1/2 cup at a time.
