I WAS CLEANN OUT MY FOOD PANTRY CLOSET N FOUND A BAG OF CARAMELS I WAS GUNNA USE IN THE FALL N NEVER DID.....SO I USED THEM IN THIS COOKIE CUP RECIPE I DECIDED TO MAKE...HUBBY TOOK TO WORK AS WELL AS GIVEN TO NEIGHBORS....THE RESPONSE WAS VERY GOOD, ITS A KEEPER :)

white sugar

brown sugar

eggs

vanilla

brewed coffee (save from mornn) ;)

semi sweet chocolate chips ( i used nestles springtime colored semi sweet chips)

kraft caramels, unwrapped

Directions Step-By-Step

IN A LARGE MIXING BOWL CREAM TOGETHER BUTTER N SUGARS UNTIL CREAMY. ADD BOTH EGGS N VANILLA N MIX WITH BUTTER N SUGAR MIXTURE.

IN A SEPERATE BOWL COMBINE FLOUR, COCOA POWDER, BAKN SODA N SALT N SLOWLY ADD TO BUTTER MIXTURE IN LARGE BOWL N MIX UNTIL THOROUGHLY COMBINED.

ADD COFFEE N SEMI SWEET CHIPS N FOLD INTO DOUGH...COVER WITH PLASTIC WRAP N REFRIGERATE FOR AN HOUR (LONGER IS OK)

SPRAY WITH COOKN SPRAY OR LINE MINI MUFFIN TIN WITH PAPER CUPS N ROLL A TBLSPN OF DOUGH INTO A BALL N PLACE IN EACH CUP (I HAD LEFT OVER DOUGH SO I LINED A BAKN SHEET WITH PARCHMENT N MADE SOME COOKIES :)

PREHEAT OVEN TO 350. BAKE FOR 15 MINUTES REMOVE FROM OVEN N WITH THE END OF A WOODN SPOON (MINE WAS PLASTIC...LOL) POKE HOLES IN EACH CUP.

PUT CARAMELS INTO A MICROWAVABLE BOWL N ADD A TBLSPN OF WATER N NUKE FOR A MINUTE N STIR UNTIL SMOOTH...U MAY NEED TO NUKE AGAIN FOR 30 SECONDS MORE N STIR :)

WITH A TSP. DRIP IN MELTD CARAMEL INTO EACH HOLE N DRIZZLE OVER COOKIE CUP. NEXT LIGHTLY SPRINKLE SALT OVER EACH CARAMEL CHOCOLATE CUP....ENJOY :)
