mommys macadamia mmmmm cookies
My husband wanted a cookie that had a toasted nut flavor without any chocolate or white chocolate. This is the same base as my chocolate chip cookie recipe. The add-ins are the only difference. I tried using different extracts, pineapple juice, fresh pineapple, they all flavored the batter so the richness was lost.

2 1/2 call purpose flour

1 tspbaking soda

1 tspsalt

1/2 cshortening

1/2 cbutter, softened

1/2 csugar

1 1/2 cbrown sugar, firmly packed

1 tsppure vanilla extract

1 Tbspmilk

2 lgeggs
-
1 1/2 cdried pineapple, chopped

1 ccoconut, shredded, packed

1 1/2 cmacadamia nuts, chopped
How To Make mommys macadamia mmmmm cookies

1Combine flour, baking soda and salt in small mixing bowl and put aside. Chop pineapple and put aside.

2In large mixing bowl cream shortening, butter, sugars, vanilla and milk. Add eggs one at a time. Slowly add flour mixture being careful not to over mix. Do not scrape bowl.

3Gently fold in the chopped pineapple, coconut and chopped macadamia nuts. Scraping the bowl as you fold. Do not over mix, you'll lose the chewy texture. Refrigerate dough for 20-30 minutes.

4Drop by rounded tablespoon onto parchment lined cookie sheets. Bake for 10-12 minutes. Let cookies cool for 5 minutes on cookie sheet before transferring onto baking rack.

5I get 3-4 dozen cookies, it depends on how much raw dough gets sampled before they bake. A serving is 2 cookies.
