In a mixer bowl ( I used my kitchen aid with paddle attachment.), beat butter for about 30 seconds. Add the sugars, baking soda and salt. Beat until well combined.
Add the eggs and vanilla, beat until smooth.
Now, beat in the 3 cups of flour. You may have to beat the last cup in my hand. This is a stiff dough. My mixer handled it, but a regular mixer may not.
Now, by hand, stir in your chips.
Using a rounded tablespoon of dough; carefully roll into balls. Place about 2 inches apart onto an ungreased cookie sheet. ( I made mine a golfball size.) Bake for 12 - 15 minutes. Check sooner, as all ovens cook differently. Mine took exactly 15 minutes.
Cool for a few minutes on cookie sheet before removing to finish cooking in a wire rack.
I take my cookies out, while they still look like they have a bit of doughiness to them in the center. They always seem to turn out wonderfully chewy. That's just how we like them.
