Ingredients For lemon poppy seed cookies

    sugar
  • 1/2 c
    unsalted butter, softened
  • 1
    egg
  • 2 Tbsp
    grated lemon peel
  • 2 Tbsp
    poppy seeds
  • 1/4 tsp
    vanilla
  • 1 3/4 c
    all purpose flour
  • 1/4 tsp
    salt

How To Make lemon poppy seed cookies

    Beat sugar and butter in medium bowl with electric mixer at medium speed until light and fluffy. Beat in egg, lemon peel, poppy seeds, and vanilla until well blended. Add flour and salt; beat just until blended. Shape dough into disc; wrap and refrigerate 1 hour.

    Preheat oven to 325. Lightly grease or line cookie sheets, with parchment paper. Shape dough by tablespoonfuls into 1 inch balls. Place 2 inches apart on prepared cookie sheets. Bake 15 minutes or until set. Cool on cookie sheets 2 minutes. Remove to wire racks; cool completely.
