Ingredients For fruit slice cookies

  • 1 c
    sugar
  • 1 c
    butter, softened
  • 2
    eggs
  • 1 1/2 tsp
    vanilla
  • 3 c
    all purpose flour
  • 1 tsp
    salt
  • yellow, green, and red food colors
  • 1 1/2 tsp
    grated lemon peel
  • 1 1/2 tsp
    grated lemon peel
  • 1 1/2 tsp
    grated orange peel
  • yellow, green, and orange sugars

How To Make fruit slice cookies

    Mix sugar, butter, eggs, and vanilla. Stir in flour and salt. Divide dough into 4 equal parts. Mix few drops yellow food color and the lemon peel into 1 part. Mix few drops green food color and the lime peel into another part. Mix few drops each red and yellow food color and the orange peel into another part. Leave remaining part plain. (If necessary, work in food color and peel with hands.) Cover and refrigerate 1 hour.

    Shape each part colored dough into roll, about 2 inches in diameter. Divide plain dough into 3 equal parts; roll each part into rectangle, 6x4 inches. Wrap rectangle around each roll of colored dough; press together. Roll in matching colored sugar. Wrap and refrigerate at least 4 hours.

    Heat oven to 400. Cut rolls into 1/8 inch slices; cut each slice into halves. Place about 1 inch apart on ungreased cookie sheet. Bake 6-8 minutes. Immediately remove from cookie sheet. *Do not use self rising flour in this recipe.
