This recipe is a family favorite when the comfort food and sugar cravings set in. It's vegetarian friendly as it contains no eggs. It can also be gluten-free by substituting the all purpose white flour. If you are not a coconut lover, you can use vanilla extract. Optional: Sprinkle with toasted coconut flakes after removing from oven. You can also fold in 1/2 - 1 cup of walnut pieces (or any nuts of your choice) when adding the chocolate chips for a crunch!
