Eggless Chocolate Chip Cookies

This recipe is a family favorite when the comfort food and sugar cravings set in. It's vegetarian friendly as it contains no eggs. It can also be gluten-free by substituting the all purpose white flour. If you are not a coconut lover, you can use vanilla extract. Optional: Sprinkle with toasted coconut flakes after removing from oven. You can also fold in 1/2 - 1 cup of walnut pieces (or any nuts of your choice) when adding the chocolate chips for a crunch! flour
1 tsp
baking soda
1/2 tsp
salt
2 stick
butter, softened
3/4 c
organic sugar
3/4 c
brown sugar
2 tsp
coconut extract
2 c
semi sweet chocolate chips; milk chocolate

ener-g egg replacer quantity for 2 eggs

Directions Step-By-Step

Preheat oven to 375°F.

Stir flour with baking soda and salt.

Using a stand or hand mixer, beat butter with sugar and brown sugar at medium speed until creamy.

Add extract flavor and egg replacer, mixing on low speed until Inc.

Gradually blend dry mixture into the creamed mixture.

Stir in chocolate and vanilla (white) chips.

Drop by tablespoon or a very small ice cream scoop onto an ungreased cookie sheet.

Bake for 10 minutes or until golden brown.
