I especially like making this grown-up treat, because it is a "no bake" goodie. Chill time, is not included in prep time.

Ingredients For coconut rum balls

  • chill time, not included in prep time
  • 1 pkg
    (12 oz) vanilla wafer cookies, crushed (about 3 1/3 cups crumbs)
  • 1 c
    finely chopped nuts
  • 1/4 c
    rum
  • 1 can
    (3 1/2 oz) flaked coconut (1 1/3 cups)
  • 1 can
    (14 oz) sweetened condensed milk
  • confectioners' sugar and/or flaked coconut, for rolling balls in

How To Make coconut rum balls

    In a large bowl, combine crumbs, nuts, and coconut. Add milk and rum; mix well. Chill 4 hours. Dip hands in confectioners' sugar; shape into 1 inch balls. Roll in confectioner's sugar or coconut. Rechill, if mixture becomes too soft. Cover and store in refrigerator. Reroll, in confectioners' sugar, before serving, if needed or desired.
