1/2 cbutter, softened

1 cpowdered sugar

- FOR THE COCONUT FILLING

1 pkg3 ounces cream cheese, softened

1/3 csugar

2 Tbspflour
-
1 tspvanilla

1 cflaked or grated fresh coconut

1/2 cchopped nuts (optional)
How To Make coconut filled chocolate cookies

1Prepare Coconut Filling: Beat cream cheese and sugar in small mixer bowl until creamy; add flour and vanilla. Stir in coconut and nuts. Cover and chill.

2Cream butter, powdered sugar, egg, and vanilla in small mixer bowl. Combine flour, cocoa, baking soda, and salt; blend into creamed mixture. Cover and chill 20 minutes.

3Divide dough in half; roll each half between wax paper into a 7x4 1/2 inch rectangle. Shape half the chilled filling into 7 inch long roll; place lengthwise on one rectangle of dough. Wrap dough around filling, sealing the long edge. Repeat procedure with remaining filling and dough. Wrap rolls tightly in wax paper; chill several hours or overnight.

4Cut each roll into 1/4 inch slices. Place slices on lightly greased cookie sheet. Bake at 375 for 8-10 minutes or until almost set. Cool slightly. Remove from cookie sheet; cool completely on wire rack.
