Ingredients For coconut filled chocolate cookies

  • 1/2 c
    butter, softened
  • 1 c
    powdered sugar
  • 1
    egg
  • 1 tsp
    vanilla
  • 1 1/4 c
    all purpose flour
  • 1/3 c
    unsweetened cocoa
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • coconut filling (below)
  • FOR THE COCONUT FILLING
  • 1 pkg
    3 ounces cream cheese, softened
  • 1/3 c
    sugar
  • 2 Tbsp
    flour
  • 1 tsp
    vanilla
  • 1 c
    flaked or grated fresh coconut
  • 1/2 c
    chopped nuts (optional)

How To Make coconut filled chocolate cookies

    Prepare Coconut Filling: Beat cream cheese and sugar in small mixer bowl until creamy; add flour and vanilla. Stir in coconut and nuts. Cover and chill.

    Cream butter, powdered sugar, egg, and vanilla in small mixer bowl. Combine flour, cocoa, baking soda, and salt; blend into creamed mixture. Cover and chill 20 minutes.

    Divide dough in half; roll each half between wax paper into a 7x4 1/2 inch rectangle. Shape half the chilled filling into 7 inch long roll; place lengthwise on one rectangle of dough. Wrap dough around filling, sealing the long edge. Repeat procedure with remaining filling and dough. Wrap rolls tightly in wax paper; chill several hours or overnight.

    Cut each roll into 1/4 inch slices. Place slices on lightly greased cookie sheet. Bake at 375 for 8-10 minutes or until almost set. Cool slightly. Remove from cookie sheet; cool completely on wire rack.
