These cookies are very versatile, for the holidays instead of peanut butter chips I added dried cherries and white chocolate chips. I also did a chocolate mint version with Andes candies bits. I've also made these with yellow cake mix for plain chocolate chip cookies. Just make sure your butter isn't to warm, otherwise the cookies have a "glossy" look to them, if using a yellow mix.
In medium sized mixing bowl add 1 Package cake mix, eggs, butter and vanilla, Mix on medium speed for two minutes or until all ingredients are blended.
Add chips and 2nd package of cake mix and mix by hand. Drop by rounded spoonfuls onto ungreased cookie sheet and bake 8-10 minutes or until bottoms of cookies are set. Cool on cookie sheet for 2 minutes then remove to cooling rack.
