Ingredients For paradise chocolate tarts

    butter, softened
  • 1 c
    sugar
  • 2
    eggs, slightly beaten
  • 1 1/2 tsp
    vanilla
  • 3 1/2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/4 tsp
    nutmeg
  • chocolate filling (below)
  • sweetened whipped cream

How To Make paradise chocolate tarts

    Cream butter and sugar in large mixer bowl until light and fluffy. Add eggs and vanilla; blend well. Combine flour, baking powder, salt, and nutmeg; gradually add to butter mixture, beating until dough forms. Cover; chill about 1 hour or until stiff. Form dough into 4 balls; roll each ball between wax paper to 1/8 inch thickness. Cut into 3 inch circles. Gently press circles into buttered muffin pans (2 3/4 inches in diameter).

    Prepare Chocolate Filling: Combine 3 cups (1 1/2 pounds) ricotta cheese, 3/4 cup sugar, 1/4 cup unsweetened cocoa, 1/4 teaspoon cinnamon, and 2 eggs, beaten in large mixer bowl; blend well.

    Spoon filling into shells. Bake at 400 for 25-30 minutes or until crust is golden brown. Cool 15 minutes; carefully remove from pan onto wire rack. Cool completely; chill. Serve topped with dollop of sweetened whipped cream. Store leftover tarts, covered, in refrigerator.
