chickpea puppy chow

I've been having fun in the kitchen lately. Have ya noticed? So I've been trying some recipes...I had some chickpeas in the pantry and decided to try something weird and new. I roasted them up without any spices and then made puppy chow with them. Of course, I used Bubba as my normal test subject and he loved them....so did his friends!

Ingredients

  • 4 cans chickpeas
  • 4 tablespoons olive oil, extra virgin
  • 1 cup chocolate chips
  • 1/2 cup peanut butter
  • 2 1/2 cups powdered sugar

How To Make chickpea puppy chow

  • Step 1
    Roast Chickpeas: Heat oven to 400 degrees.
  • Step 2
    Drain and rinse chickpeas in a colander, then pat dry. Place in a bowl.
  • Step 3
    Coat with oil and toss.
  • Step 4
    Line baking sheet pan with foil. Place chickpeas in a single layer on the foil.
  • Step 5
    Roast 40 minutes. Turning after 20 minutes and again at 30 minutes. Allow chickpeas to cool completely.
  • Step 6
    Prep Chocolate Coating: In a medium bowl, melt chocolate chips and peanut butter together. About 30 seconds in the microwave, stirring 1/2 way through.
  • Step 7
    Mix cooled chickpeas in chocolate mixture.
  • Step 8
    Coat with Powdered Sugar: The goal is to just get it all evenly covered.
  • Step 9
    The easiest way is to sprinkle 1 1/2 cups of powdered sugar into a gallon size Ziploc bag, then add chocolate covered chickpeas and the top with the other 1 cup of sugar.
  • Step 10
    Seal bag and shake, shake, shake to cover.
  • Step 11
    Store in an airtight container.
