cinnamon sticks (optional)
if using a bag of sweetened shredded coconut you would just add a few table spoons of sugar. If using fresh shredded or grated coconut use more sugar. Just adjust according to your taste.
shred coconut if using a fresh one you can pour the water from the coconut into the pot also.
pour milk into pot add coconut, start with 2 or 3 tbs of sugar 1 tsp of vanilla and if using cinnamon 1 sticks.
cook over medium low heat constantly stirring and continue cooking and stirring until mixture thickens. Taste to check sweetness and add more sugar if needed.
when very thick place tablespoon sized mounds on a cookie sheet lined with parchment paper or wax paper, refrigerate to cool. enjoy 8]
you can add a little food coloring for color if you like.
