strawberry lemonade cupcakes
These cupcakes are perfect for a summer get-together or BBQ. They are strawberry lemonade flavored and the inside is a homemade strawberry mix. I love making these all year long but they are really good on a hot summer day.

Ingredients
- 1 box white cake mix
- 1 box strawberry jell-o
- 2 tablespoons sweetened lemonade mix (i ues country time)
- 16 oz packages frozen strawberries in sugar, thawed
- 3 large eggs
- 1/3 cup vegetable oil
- 1/2 cup butter
- 3 cups powdered sugar
- 1/3 cup sweetened lemonade mix (country time)
- 2 tablespoons water
- - chewy lemonheads candy, for garnish
- - sparkling sugar, for garnish
How To Make strawberry lemonade cupcakes

Step 1Preheat oven to 350 degrees.

Step 2Stir together Cake mix, dry Jell-O and 2 tablespoons lemonade mix.

Step 3Puree strawberries.

Step 4Add strawberries, eggs and vegetable oil to dry ingredients.

Step 5Mix until smooth and blended

Step 6Place liners in cupcake pan and fill 2/3 full.

Step 7Bake about 20 minutes or until tooth pick stuck in center comes out clean.

Step 8Allow to cool completely.

Step 9Cream butter in a medium bowl.

Step 10Slowly add in the powdered sugar and 1/3 cup lemonade mix.

Step 11Add water as needed, until everything is incorporated and frosting is right consistency.

Step 12Transfer icing to piping bag or zippered bag and clip corner to pipe.

Step 13Ice tops of each cupcake and optionally dust with sparkling sugar and lemonhead.
