MOMS Oatmeal Cake My Way

The original recipe called for the topping to be broiled, but I wanted to do some thing a little different, and I really like the way it turned out so wanted to share with you. I don't double the topping recipe.

Ingredients

1 c
quick oatmeal
1 c
brown sugar, firmly packed
1 clove
white sugar
1 1/3 c
flour
1/2 tsp
salt
1 tsp
soda
1 tsp
cinnamon
1/2 tsp
nutmeg
1/2 tsp
cloves

TOPPING

1 c
nuts
1/2 c
brown sugar
1/2 c
white sugar
6 Tbsp
butter--melted
1 c
coconut
1/4 c
cream ( i use canned milk)
1 tsp
vanilla extract

Directions Step-By-Step

Turn oven on 350* Grease and flour a 9 x 13 pan

Put all ingredients in mixer bowl and mix together.

These were not put in the recipe but must be added.
Add 1/2 cup butter or margarine, 2 eggs and 1 1/2 cup boiling water---this will be very thin batter.

Mix up the topping and drop into the batter with a tablespoon. leaving a space in between. when you have the topping all in the batter, put in oven and bake for 60 min. This is a great cake and each serving will have a bit of the topping in each one. It doesn't need to be frosted but you could serve with cool whip or Ice Cream.
