Ingredients

2 c
sugar
1 c
oil
3
eggs
2 tsp
vanilla extract
3 c
peeled and cubed apples - i use granny smith
1 tsp
baking soda
1 tsp
cinnamon
1 tsp
salt
2 c
flour
handful
chopped pecans - optional

SAUCE

1/2 c
unsalted butter
1 c
brown sugar, packed
1/3 c
heavy cream or milk

Step-By-Step

1Preheat your oven to 350 degree F.

In a large bowl, beat sugar, oil, vanilla and eggs until well blended..I do this all by hand with a whisk.
2Add the flour, salt, baking soda and cinnamon. Beat until well blended ( batter will be thick.)
3Fold in nuts and apple.
4Spray a 9 x 13 baking pan or dish with bakers secret or grease and flour.

Spread batter into pan evenly.

Bake for 55 - 60 minutes.

Cool completely.
5Make caramel glaze:

In a saucepan, add butter, brown sugar, cream or milk. Cook over medium heat, stir continuously, until the mixture comes to a boil.

DO NOT stir for 3 - 3 1/2 minutes. Remove from the heat and spread over the top of the cake. ( I line a cookie sheet with foil and remove my cake, for easier serving and so the caramel can run down the sides.)

Leave the cake sit for at least an hour before serving.
6You will love this deliciously moist cake. You might want to share with a neighbor as it's quite addictive.

Enjoy!
