    egg yolks, room temperature
  • 3/4 c
    sugar
  • 1 tsp
    vanilla
  • 6
    egg whites, room temperature
  • 1/3 c
    unsweetened cocoa
  • 3 Tbsp
    flour
  • 1 qt
    ice cream (any flavor)
  • hot fudge sauce (below) or powdered sugar
  • FOR THE HOT FUDGE SAUCE
  • 3/4 c
    sugar
  • 1/2 c
    unsweetened cocoa
  • 2/3 c
    evaporated milk
  • 1/3 c
    light corn syrup
  • 1/3 c
    butter
  • 1 tsp
    vanilla

How To Make deluxe ice cream cocoa roll

    Grease 15 1/2x10 1/2x1 inch jelly roll pan; line with wax paper and lightly grease paper. Set aside. Beat egg yolks in small mixer bowl on high speed; gradually add 1/4 cup of the sugar and the vanilla, beating until thick and lemon colored. Beat egg whites in large mixer bowl; gradually add 1/4 cup of the sugar, beating until stiff but not dry. Carefully fold egg yolk mixture into beaten egg whites. Combine remaining 1/4 cup sugar, the cocoa, and flour; fold about 2 tablespoons at a time into egg mixture just until blended.

    Spread batter evenly in prepared pan. Bake at 375 for 15-18 minutes or just until cake springs back when touched lightly in center. Invert onto slightly dampened towel; carefully peel off wax paper. Immediately roll cake and towel together starting from narrow end; place on wire rack to cool completely. Carefully unroll cake; remove towel. Quickly spread with softened ice cream. Reroll; wrap and place in freeze. Freeze completely.

    Make the Hot Fudge Sauce: Combine sugar and cocoa in saucepan; blend in evaporated milk and corn syrup. Cook over medium heat; stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Serve warm. At serving time, drizzle the sauce or sprinkle with powdered sugar; slice and serve with additional sauce, if desired.
