Cream cheese lemon bars

These are are great citrusy, creamy dessert! I usually bring them to church functions.

Ingredients

1 pkg
yellow cake mix w/ pudding, or 1 pkg cake mix and 1 pkg instant lemon pudding mix
2
eggs
8 oz
reduced-fat cream cheese, softened
1/3 c
sugar
1 Tbsp
lemon juice
1/3 c
canola or vegetable oil

Step-By-Step

1Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. In lg bowl, beat cake mix and pudding mix, 1 egg and oil until combined.

2It will be crumbly, that's fine. reserve 1 cup of mix. Pat remaining mix into bottom of pan. Bake 15 mins.

3In another bowl, beat cream cheese, egg, sugar and lemon juice until smooth. Spread over cooled crust. Sprinkle w/ remaining cake mix, bake 15 mins more.
