Ingredients For celebrity "hummingbird" cake

  • FOR THE CAKE
  • 3 c
    all purpose flour
  • 2 c
    sugar
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1 tsp
    ground cinnamon
  • 3
    eggs, beaten
  • 1 1/2 c
    vegetable oil
  • 1 1/2 tsp
    vanilla extract
  • 1 can
    8 ounce crushed pineapples, undrained
  • 2 c
    chopped bananas (about 4)
  • 2 c
    chopped pecans
  • FOR FROSTING
  • 2 pkg
    8 ounces cream cheese, softened
  • 2 stick
    butter
  • 2 box
    16 ounces each powdered sugar
  • 2 tsp
    vanilla extract

How To Make celebrity "hummingbird" cake

    Preheat oven to 350. In large bowl, combine dry ingredients. Add eggs and oil; stir until moistened. Stir in vanilla, pineapple, bananas, and 1 cup chopped pecans.

    Spoon batter into 3 greased and floured 9 inch cake pans.

    Bake 25 minutes or until toothpick inserted in center of cakes comes out clean. Cool in pans 10 minutes. Remove from pans and onto wire racks to cool completely.

    Meanwhile, for frosting, in a large bowl, with electric mixer, beat cream cheese and butter until smooth. Add powdered sugar and beat until light and fluffy. Stir in vanilla.

    Generously spread frosting between cooled cake layers and on sides and top of cake. Garnish with remaining 1 cup pecans.
