Blind Date Cake - Steph

My mother served this very moist and delicious cake at her recent card party. Even if you are not a fan of dates, you would like this cake as there is just a subtle hint of dates.

Ingredients

1 c
dates, finely chopped
1 1/4 c
boiling water
1 tsp
baking soda
1/2 c
butter
1 c
sugar
2
eggs
1 tsp
vanilla
1 1/4 c
flour
3 Tbsp
cocoa
1/2 tsp
salt
1 1/2 c
brown sugar
1 c
chocolate chips
1/2 c
chopped nuts

Directions Step-By-Step

Mix the dates with the 1 1/4 cup boiling water; let cool. Stir in the 1 tsp. baking soda and set aside.

Cream together 1/2 c. butter, 1 c. sugar, 2 eggs, and 1 tsp. vanilla until creamy.

Combine 1 1/4 c. flour, 3 T. cocoa, and 1/2 tsp. salt. Blend to creamed mixture; stir in date mixtures.

Put in 9 x 13" greased pan and sprinkle on top, the following: 1 1/2 c. brown sugar, 1 c. chocolate chips, and 1/2 c. chopped nuts.

Bake at 325 degrees for 35 minutes. ENJOY!
