Blackberry Jam Cake

This is an old recipe and is delicious. Tastes better with buttermilk. Can make buttermilk by adding 1 tablespoon of vinegar to 1 cup of milk.

Ingredients

4
eggs, separated
4 c
flour
2 tsp
baking soda
2 Tbsp
cinnamon
1/2 tsp
salt
1 tsp
nutmeg
2 c
brown sugar
2 c
blackberry jam
2 stick
butter,melted
2 c
milk or buttermilk

Step-By-Step

1Mix wet ingredients with egg yolks
2Add 2 cups of milk or buttermilk
3Sift and stir dry ingredients in another bowl.
4Add dry ingredients a little at a time to wet ingredients and stir.
5Beat egg whites till a little foamy and add to cake batter.
6Add 1 cup of raisins and stir.
bake at 350 degrees for 45minutes to 1 hour till golden
