dried apricots ,chopped
In a medium saucepan, combine & simmer very gently,1 cup water,1/4 cup sugar & chopped apricots for 20 minutes.Remove from heat and cool completely.
Cream until light & fluffy butter, sugar & vanilla. Add eggs,one at a time, beating well after each addition.
Sift together flour & baking powder.
Fold half the dry ingredients into the creamed mixture and mix together. Fold in the cooled apricot mixture followed by the remaining dry ingredients.Mix until well blended.
Bake in a greased & floured tube pan or 2 loaf pans in a 350 degree oven for 1 1/2 hours or until done.
