Ingredients

2 1/4 c all purpose flour
1 tsp baking powder
1 tsp baking soda
2 tsp pumpkin pie spice
1 tsp ground cinnamon
1/2 tsp kosher salt
1/2 c butter, softened
1 c granulated sugar
1/2 c light brown sugar
1/2 tsp pure vanilla extract
1 c pumpkin, canned (not pie filling)
1 egg
1 1/2 c white chocolate chips

These cookies are soft, chewy and rich. They go perfectly with a cup of coffee or a glass of milk.

 

Directions

Preheat oven to 350 degrees. Whisk the flour, baking powder, baking soda, cinnamon, pumpkin pie spice and salt in a medium bowl; set aside.


In the bowl of a stand mixer, fitted with a paddle attachment, cream the butter and sugars. Add the pumpkin, egg, and vanilla and combine thoroughly. Slowly add the dry ingredients. Drop on a cookie sheet lined with parchment paper.


Bake for 10-12 minutes in the preheated oven. Cool for a couple minutes on the cookie sheet The recipe makes 36 small cookies or 18 large cookies.

I'm very happy with the amount of cookies (3 trays). With the size of my family, this was the perfect recipe. When looking at recipes, I wanted to use what I had available in the house. I had white chocolate, but no coconut or nuts. I love, that the batter out shines the chips. And the family seems pretty happy too.
