1 c softened butter - not melted
2 c white chocolate chips
1 1/4 c chopped macadamia nuts
3 egg whites
1 c light brown sugar

Sweet, nutty and delicate, these yummy white chocolate bars are made even more special by the addition of brown sugar meringue... So good!

 

Directions

Crust: mix flour, powdered sugar, and butter with pastry blender until crumbly. Press firmly into a ungreased 13X9 pan and bake at 375° for 14 minutes or until golden. Remove from heat.

Topping: sprinkle morsels and 1 cup nuts over the hot crust.

Beat egg whites with mixer until frothy. Gradually add brown sugar. Beat until stiff peaks form. Spread meringue over morsels and nuts. Sprinkle with remaining nuts. Bake at 375° for 15 minutes or until golden brown. Serve warm or cool.

I make bar cookies to serve between services at church....I really want to try this recipe, but am fearful of the meringue being that I bake on Saturday and serve on Sunday....will it hold up? or start getting rubbery?....do I need to get up earlier than usual and bake this on Sunday morning. Prayerfully I will get an answer today...

Hi, Sounds really good but that is a really good question that wasn't listed on recipe ...Does the meringue hold up???? How long does it last after baked????? anyone???

Lindamake it on saturday and get up on sunday morning n do the topping n make sure you use enough cream of tartar n it will not failBlessings!!

How much cream of tarter should u use...I have never made a meringue...

If you have never made a meringue, why not practice first, before you make something for a crowd! Use the above recipe for meringue and bake it on top of a small white or yellow cake mix. That way you won't waste all the other good ingredients. I have a recipe from my grandmother in the 1940s that calls for this meringue on a 9 x 12 white cake and it holds up great overnight! Good luck.

Hi! I'm sorry this is so late in response....the meringue lasts a good while and isn't rubbery. I leave it out on the countertop but it doesn't last a long time! ;) Enjoy.
