Preheat oven to 350°. Mix all ingredients but chocolate chips. Stir in chocolate chips after everything else is mixed well. Drop from teaspoon on an ungreased cookie sheet (I use a pizza stone and parchment paper--they bake more evenly using the stone) and bake for 10-12 minutes.
*You really need to watch these cookies carefully while they are baking because they burn easily. Take them out when they are slightly brown on the edges. They will look like they are not cooked all the way in the center but they really are just fine. Allow them to cool for at least 5 minutes on the cookie sheet before removing them.
**Any flavor of cake mix can be used. I’ve made them with Raspberry and Lemon cake mix.
