Soft Pumpkin Cookies

I've had this recipe for so long that I can't remember where it came from. These cookies are so moist and light. They're also good with a dollop of cream cheese icing and a sprinkle of ground walnuts.

Ingredients

1/2 c
butter, softened
1 1/2 c
sugar
1
egg
1 c
pumpkin puree
1 tsp
vanilla extract
2 1/2 c
all purpose flour
1/2 c
walnut pieces
1 tsp
baking powder
1 tsp
baking soda
1/2 tsp
salt
1 tsp
nutmeg
1 tsp
cinnamon
1 tsp
pumpkin pie spices

Step-By-Step

1In a large bowl, mix together all dry ingredients. In another bowl, mix together the butter, sugar, egg, pumpkin and vanilla. Pour pumpkin mixture into dry ingredients and mix well.
2Preheat oven to 350 degrees. Drop by rounded teaspoons onto greased cookie sheet. Bake for 15 minutes or until lightly browned.
3May be frosted with cream cheese icing if desired.
