Ingredients

1 c
all purpose flour
3/4 c
graham crackers, crushed
1/2 tsp
baking soda
1/2 tsp
kosher salt
8 Tbsp
softened butter, unsalted (one cube)
1/2 c
creamy peanut butter
1/2 c
sugar
1/2 c
brown sugar, firmly packed
1
egg
1 tsp
vanilla extract
24 large
marshmallows cut in half horizontally
48
pieces hershey chocolate bars (4 bars)

Directions Step-By-Step

Preheat oven to 375.
Whisk together flour, graham cracker crumbs, baking soda and salt. Set aside

Cream butter, peanut butter and sugars together in a large bowl with a mixer on medium speed until light and fluffy. Beat in egg and vanilla until incorporated. Blend in flour mixture on low speed.

Scoop dough with #60 scoop (about 1 Tbsp) onto ungreased baking sheets. Bake for 4 minutes. Top each cookie with a marshmallow half and bake another 4-5 minutes until marshmallow is golden. Transfer cookies to cooling rack and press chocolate pieces on top. Let stand 5 minutes.
