This recipe calls for grated coconut. I chose to use unsweetened coconut because sweetened coconut makes this recipe very sweet.

Makes 25-2 in. bars

Ingredients

1 c
all purpose flour
1 tsp
baking powder
pinch
salt
1/2 c
butter
2 Tbsp
milk
1
egg
1 c
sugar
2 c
coconut, grated
1 jar(s)
(8 oz.) raspberry jam

Step-By-Step

1Sift flour, baking powder & salt into a bowl.

2Cut in the butter & add milk.

3Knead very lightly. Press into a 10 x 10 pan.

4Bake in a preheated 350 oven for 10-15 minutes until light brown.

5While dough is baking, beat egg with sugar & fold in coconut.

6Spread baked dough with jam, then with coconut mixture.

7Return to oven for 20-25 minutes until a very light brown.

8Cut into bars when cool.
