Pumpkin Spice Snickerdoodles

Wendy Rusch

Most people love a good snickerdoodle...well that's never been a favorite of mine and one day was thinking...........(I know, look out, Wendy's thinking again!) But this time came a wonderful result! And NOW...This cookie is one of my most requested best sellers!

pinch tips: How to Melt and Soften Butter

1/2 c
butter, softened
1/2 c
shortening, i use butter flavor crisco
1 1/2 c
2 large
3 c
2 tsp
cream of tartar
1 tsp
baking soda
1/2 tsp
1 tsp
pumpkin pie spice (if you don't have this on hand, there couple recipes for it on the site)
1/2 c
1 Tbsp
pumpkin pie spice, amount depends on how spicy you like it...

Directions Step-By-Step

Cream together butter, shortening and sugar until fluffy, add egg and mix well. Sift together then add flour, tartar, soda, salt, 1 tsp of pumpkin pie spice and blend well, it may seem crumbly but it will come together into a nice dough, just takes a few minutes sometimes.
Mix the 1/2c of sugar with 1T of pumpkin pie spice in a bowl and set aside for rolling dough balls in. Amount of sugar to spice just depends on your liking...start with 1T pumpkin pie spice for the first pan, if you'd like more spice add more to the sugar.
Roll dough into 1 1/2" balls or walnut size, then roll in sugar and spice mixture, place on cookie sheet, flatten slightly with bottom of a glass. Bake at 375 for 9-11 minutes. Remove from pan right way to cool on wire racks.
*This is one of those cookies that is best right out of the oven (as is any cookie lol) or after being stored in an air tight container a few hours. ENJOY!!!
