FREDA's StoryThis is a family favorite that My kids all loved while growing up. My Daughter called me the other night telling me she was making the Pumpkin baers we had as kids for her kids and grands. Just Brought back memories of the good Times we emjoyed as family..
I used to add raisins and Nuts, Today I added Some Fresh apple bits and these were so Moist and so Good You just couldn't have just one bar. . .
Very Simple Bars to Make. . . makes a large pan. 10X 13 size.
PUMPKIN APPLE BARS
1 2/3 cups
veg. oil ( or 1/2 cup applesauce for 1/2 c of the oil)
15 oz can of pumpkin, ( not the pumpkin pie mix)
1 1/2 Cup
fresh apples, peeled, chopped & diced ( fuji or gala)
CREAM CHEESE FROSTING
cream cheese, softened
butter, room temperature
1Preheat Oven @ 350.
Grease a 10 X 13 pan
Peel Chop and dice apple and set aside.
2Mix Eggs, sugar, Oil & pumpkin well with electric Mixer, til light and fluffy.
3Stir together Dry Ingredients, Flour, Baking Pdr, Soda, Cinn, nutmeg, & Salt.
Now, Add 2 Tbs of the Flour Mixture to Fresh Diced and Chopped apples. Toss very well. Set aside the apples.
4Add all the Dry ingredients to the Pumpkin mixture, Mix on Low speed til batter is smooth and wel blended.
Now you can add the Floured apples and stir well to Blend.
5Pour your batter evenly into Greased 10X13 pan.
Bake @ 350 for 30 min.
Let Cool completely, before frosting.
Frost with cream Cheese Frosting.
Cut into 2 X 3" bars and enjoy.
I betcha you can't have just one!!!
Mix the Cream Cheese, & Butter in a med Bowl, using an electric Mixer til smooth and fluffy.
Add; Pdr Sugar, mix well.
STIR in Vanilla, and Cinnamon.
Frost your Completely Cooled Bars. . . Now Enjoy
