This is a family favorite that My kids all loved while growing up. My Daughter called me the other night telling me she was making the Pumpkin baers we had as kids for her kids and grands. Just Brought back memories of the good Times we emjoyed as family..
I used to add raisins and Nuts, Today I added Some Fresh apple bits and these were so Moist and so Good You just couldn't have just one bar. . .

Very Simple Bars to Make. . . makes a large pan. 10X 13 size.

Ingredients

PUMPKIN APPLE BARS

eggs
1 2/3 cups
sugar
1 Cup
veg. oil ( or 1/2 cup applesauce for 1/2 c of the oil)
1 can
15 oz can of pumpkin, ( not the pumpkin pie mix)
2 Cups
flour
2 tsp
baking powder
1 tsp
baking soda
2 tsp
cinnamon
1/2 tsp
nutmeg
1 tsp
salt
1 1/2 Cup
fresh apples, peeled, chopped & diced ( fuji or gala)
CREAM CHEESE FROSTING
8 oz
cream cheese, softened
1/2 C
butter, room temperature
2 Cups
powdered sugar
1 Tsp
cinnamon
1 Tsp
vanilla extract

Directions Step-By-Step

Preheat Oven @ 350.
Grease a 10 X 13 pan
Peel Chop and dice apple and set aside.

Mix Eggs, sugar, Oil & pumpkin well with electric Mixer, til light and fluffy.

Stir together Dry Ingredients, Flour, Baking Pdr, Soda, Cinn, nutmeg, & Salt.
Now, Add 2 Tbs of the Flour Mixture to Fresh Diced and Chopped apples. Toss very well. Set aside the apples.

Add all the Dry ingredients to the Pumpkin mixture, Mix on Low speed til batter is smooth and wel blended.
Now you can add the Floured apples and stir well to Blend.

Pour your batter evenly into Greased 10X13 pan.
Bake @ 350 for 30 min.
Let Cool completely, before frosting.
Frost with cream Cheese Frosting.
Cut into 2 X 3" bars and enjoy.

I betcha you can't have just one!!!

FROSTING:
Mix the Cream Cheese, & Butter in a med Bowl, using an electric Mixer til smooth and fluffy.
Add; Pdr Sugar, mix well.
STIR in Vanilla, and Cinnamon.
Frost your Completely Cooled Bars. . . Now Enjoy

I have made this cake 3 times my family and friends love it. I have added nuts and raisins to it. it stays so moist ( that's if it last. The last one I made was gone in the same day.

Freda have you ever made this with fresh pumpkin. I have some that I am ready to cook. I thought I may try it. The cake looks delicious

Lori, Yes You can Make this In Muffin Tins, Just Watch your Baking time as it will change.
I would guess & Say 15-18 min Maybe.
Just Be sure you check them as You bake them.

I can't wait to try this recipe! This weekend is our last camping club campout. I'm making this for our dish to pass dinner on Sat eve. I'm sure this will go over very well, I know it will for me! Thanks for sharing.
