Ingredients

1/2 c butter, softened
1 c brown sugar
10 oz apricot preserves
2 eggs,beaten
1 tsp vanilla
1 3/4 c all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 c bananas, mashed
1/2 c nuts

I still find lots of my time is spent making cookies. You may be shocked to find out how many “Cookie Monsters” there are!
This is a recipe I find I used quite a bit and still do.

So moist and delicious!  This recipe would be terrific for served for breakfast, afternoon tea or anytime you want a great tasting snack.

 

Directions

Cream together butter and brown sugar.
Add preserves,beaten eggs and vanilla.

Combine the flour, baking powder, baking soda and salt together in a separate bowl and add to the creamed mixture. Add the mashed bananas and stir well. Then add the nuts and stir well.

Pour into a greased and floured 13”x9” pan.
Bake at 350F for 35-40 minutes.

Cool, cut into bars and enjoy!

I sometimes glazed them with a vanilla frosting, drizzled after cooling.

We changed up since we didn't have apricot preserves added strawberry and added a handful of choc chips. Hubby tried and loves them. Taking them to potluck today. So very moist thanks for sharing a great fall or anytime of year recipe. We skipped the frosting since we added choc chips to the batter. Yum!

I have a whole lot of pumpkin puree and thought these might translate well to pumpkin bars but trying to think of preserves other than apricot that might go well ... any ideas from the group?
