Pinoccate-(Pine nut cookies)

Wow, these cookies were always a favorite of mine. I love making them due to the smell of the almond paste. We always made these with a nice glass of wine on hand or two or three....lol.

Beat together almond paste and sugar until well combined. Beat egg whites until very frothy. Add paste mixture to the whites and beat for 2-3 minutes. Drop dough onto buttered cookie sheet 2" apart. Press pine nuts into dough, making sure you have a good amount on each cookie. Bake 15 minutes or until edges start to turn a light brown. Cool on a rack.

These sound amazing. I LOVE almond flavored anything and I love pine nuts. Have you ever toasted them first to bring out the nuttiness before adding them to the cookies?

no I haven't, due to the baking does that, but worth trying. Will have to try on a batch. I too love pine nuts, but they have gotten so expensive...lol.
