Wow, these cookies were always a favorite of mine. I love making them due to the smell of the almond paste. We always made these with a nice glass of wine on hand or two or

7 oz
almond paste (coarse)
3/4 c
2 large
egg whites
1 Tbsp
almond extract
1/4 c
pine nuts or more if desired

Directions Step-By-Step

Preheat oven to 375
Beat together almond paste and sugar until well combined. Beat egg whites until very frothy. Add paste mixture to the whites and beat for 2-3 minutes. Drop dough onto buttered cookie sheet 2" apart. Press pine nuts into dough, making sure you have a good amount on each cookie. Bake 15 minutes or until edges start to turn a light brown. Cool on a rack.

These sound amazing. I LOVE almond flavored anything and I love pine nuts. Have you ever toasted them first to bring out the nuttiness before adding them to the cookies?
