  • 1/2 c
    butter, softened
  • 1/4 c
    + 2 tablespoons canola oil
  • 1/2 c
    + 2 tablespoons sugar (plus a 1/4 cup for dipping glass into)
  • 1 Tbsp
    water
  • 1 tsp
    vanilla extract
  • 1
    egg
  • 1-2 tsp
    red food coloring
  • 1/4 tsp
    baking soda
  • 1/4 tsp
    cream of tartar
  • 1/4 tsp
    salt
  • 2 3/4 c
    all-purpose flour

How To Make ‘pink velvet’ lofthouse cookies

    Preheat oven to 325 degrees. Spray non-stick spray on cookie sheets. Add butter, oil and sugar to a mixing bowl and mix until incorporated well. Add the water and vanilla and continue mixing together. Add egg and beat in, then add in red food coloring and mix well. Add the baking soda, cream of tartar, salt and flour wet mixture and mix until thoroughly incorporated.

    Using a medium scoop, make balls of dough. Using a flat bottom glass that has been dipped in sugar, press down on cookies to get that crinkly edge. Bake for 9-11 minutes. Don't overbake, you don't want cookies to be brown on bottoms. Transfer to a wire rack to let cool.

    Cream Cheese Frosting: Combine frosting ingredients together. Beat until thick and creamy. (Warm up in microwave a smidge 10-15 seconds if you want a thinner glaze to spread on top, it will thicken up as it cools.) Frost cookies and sprinkle with your decoration of choice.
