Parker Texas Ranger cookies

My wifes family's roots go deep in texas and there were several texas ranger's in the family. This recipe has been in the family for years and is said to be a favorite among the Rangers.

Ingredients

2 stick
sofened butter
1 c
brown sugar
1 c
white sugar
1 tsp
salt
2 c
flour
1 tsp
vanilla
2
eggs
2 tsp
baking soda
2 c
rolled oats
2 c
corn flakes
1 c
coconut
1 c
chopped pecans
1 c
semi sweet chocolate chips

Directions Step-By-Step

cream butter and both sugars together.

add vanilla and eggs

sift flour, add salt, baking soda, and baking powder.

combne dry and creamed ingredients,

add rolled oats and coconut.

finally, add crushed corn flakes, and pecans and chocolate chips. blend well.

grease a cookie sheet. then drop spoonfulls of mixture onto sheet.

bake at 350 for 10 to 15 minutes.

We make these to called Crunchies or Kitchen sink cookies....good recipe glad you posted yours.

The recipe I have for Texas Ranger Cookies doesn't call for the chocolate chips and the coconut is optional. I have usually made them in the past just plain, without coconut, choc chips or nuts... But I have made them with butterscotch chips in them, and I think they are INSANELY good like that, or plain. But I think I may try a choc chip/butterscotch chip mix. Maybe with pecans... all the combos sound great! My recipe was handed down from my Grandma, and I believe she got it from her mother. Not sure... But I would highly recommend these cookies to anyone who has never had them. I sent some with my husband to his work for a throw down lunch he had one time. All his co-workers loved them and wiped them out in minutes! Now I'm craving these. Going to get the stuff and make them tomorrow!
