2 c
1 c
confectioners' sugar
1 tsp
coarse salt
1 1/2 Tbsp
lemon zest
1 tsp
fresh lemon juice
2 stick
butter, cut into pieces
egg yolks
1/4 c
granulated sugar, for rolling

2Mix flour, confec. sugar, salt and lemon zest until combined.

3Mix in butter.

4Add egg yolks and lemon juice; mix until dough is formed.

5Divide dough in half and form each half into a log (1-1/2 " wide). Wrap in plastic and freeze until firm, 2 hours or more. (Will keep ok in freezer up to a month.)

6Preheat oven to 350. Spray 2 baking sheets with cooking spray. Roll logs in granulated sugar to coat. Slice logs into 1/4" thick slices and arrange on baking sheets 1" apart.

7Bake until cookies are golden brown around the edges, 12 to 15 minutes. Transfer cookies to wire racks to cool.
